Trout the JZ way!

A few evenings ago a lovely guest at the Rainbow Drive Resort (Who is to shy for me to use his name so, I will refer to him as JZ) invited me to eat some of his wonderful catch.  As I arrived at the lower lawn for my meal I could smell the aroma of the trout but, there was also a hint of something sweet and something spicy mingling in the air.  JZ had the trout wrapped in aluminum foil and in the glowing embers of the fire pit.  We sat on the lower lawn talking about his day's fishing adventure as the the trout continute to cook and fill the air with it's wonderful fragrance.  My mouth started to water and I asked- more than once- if the meal was ready.  JZ just laughed and said "Good things come to those who wait !"  He was soooo right.  When the trout had cooked through he took it out of the embers and cut open the aluminum packets.  The air exploded with a sweet and spicy blend.  As I devoured my meal not talking but merely nodding my responses to his questions I am sure JZ thought that I had not eaten for weeks. The trout was amazing! It was delicately sweet with just the right kick.  After licking my fingers as well as my plate totally clean I asked JZ if I could share his recipe with all of you wonderful people and he so kindly agreed- as long as he remained anonymous.  So here it is folks! and be ready for the best trout you have ever eaten. Trout is wrapped in aluminum and place in glowing embers.

Ingredients:

1 whole trout, pan-dressed

2 tablespoons butter

2 tablespoons lemon juice

1 teaspoon honey

1/2 teaspoon ground cayenne pepper

 

1/2 teaspoon lemon pepper

 

Directions:

1. Place trout on center of a sheet of foil. Rub the inners of the trout with the butter.  Drizzle lemon juice and honey all over the trout, inside and out.
2. Sprinkle chile pepper inside as well. Sprinkle a little water (to keep it moist).
3. Place other sheet of foil on top, roll sides tight. Place package directly on top of  hot embers and pile embers on top of package.
4. Cook in embers for 12-15 minutes or until you can hear it sizzle.  Cool -Cut open (be careful) and enjoy!
